  • 1 pound fresh calamari (cleaned and cut into rings)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice (about 1 juicy lemon)
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Lemon wedges (for garnish)

Method
 

Preparation
  1. Rinse the calamari under cold water and pat it dry with a paper towel.
  2. In a medium bowl, combine the calamari, olive oil, lemon juice, minced garlic, cilantro, salt, and pepper. Toss to combine.
Grilling
  1. Preheat your grill or grill pan over medium-high heat.
  2. Place the calamari on the grill and cook for 2-3 minutes per side until opaque and charred.
Serving
  1. Remove the calamari from the grill and transfer to a plate.
  2. Squeeze some extra lemon juice over the calamari and serve warm with fresh cilantro and lemon wedges on the side.

Notes

Letting the calamari sit in the marinade for at least 30 minutes enhances the flavors. If using a grill pan, ensure the surface is hot before grilling to achieve a good sear.
