For the Grilled Fish
  • 4 fillets fillets of your favorite white fish (like tilapia or cod)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
For the Crispy Fries
  • 4 medium-sized potatoes, cut into fries
  • 3 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Optional: Paprika or garlic powder for extra flavor

Preparation
  1. Start by marinating your fish fillets. In a bowl, mix together the olive oil, lemon juice, minced garlic, salt, and pepper.
  2. Gently coat the fillets with the marinade and let them sit while you prepare your fries—about 15-20 minutes should do the trick!
Cooking the Fries
  1. Preheat your oven to 425°F (220°C).
  2. Toss the cut potatoes in a bowl with vegetable oil, salt, pepper, and any additional seasonings you like.
  3. Spread the fries in a single layer on a baking sheet lined with parchment paper.
  4. Bake them in the oven for about 25-30 minutes, flipping halfway through, until they turn golden brown and crispy.
Grilling the Fish
  1. Preheat your grill to medium-high heat.
  2. Place the marinated fish fillets directly on the grill.
  3. Cook for about 3-4 minutes on each side, or until the fish flakes easily with a fork.
  4. Remove the fish carefully and set it aside.
Serving
  1. Serve the grilled fish alongside your crispy fries, and sprinkle some fresh parsley on top for that pop of color!

Notes

Double the recipe for larger gatherings. Fries can also be made with sweet potatoes for a different flavor. Fish can be pan-seared if grilling isn't preferred.
