  • 1 pound large sea scallops
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice
  • Fresh parsley, for garnish if you’re feeling fancy
For the Homemade Rémoulade
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon capers, finely chopped
  • 1 tablespoon pickle relish
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • Salt and pepper, to taste

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. Rinse the scallops and pat them dry with paper towels.
Make the Rémoulade
  1. Combine the mayonnaise, Dijon mustard, capers, pickle relish, lemon juice, and paprika in a bowl.
  2. Whisk until smooth and adjust seasoning with salt and pepper.
Season the Scallops
  1. Drizzle the scallops with olive oil and sprinkle with salt, pepper, and lemon juice.
  2. Gently toss to coat evenly.
Grill Time
  1. Place the scallops on the grill and cook for about 2-3 minutes per side, until opaque.
Serve
  1. Plate the scallops and drizzle with homemade rémoulade.
  2. Garnish with fresh parsley before serving.
