Ingredients
  

For the Salad
  • 1 pound large shrimp, peeled and deveined
  • 4 cups mixed salad greens (spinach, arugula, or your choice)
  • 1 cup cherry tomatoes, halved
  • 1 whole avocado, sliced
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Method
 

Marinate the Shrimp
  1. In a bowl, toss the shrimp with 2 tablespoons of olive oil, lemon juice, garlic powder, salt, and pepper. Let marinate for about 15 minutes.
Prepare the Grill
  1. Heat your grill to medium-high and clean with a wire brush if desired.
Grill the Shrimp
  1. Place the marinated shrimp onto the grill. Grill for about 2-3 minutes on each side, or until they turn pink and opaque.
Assemble the Salad
  1. In a large bowl, toss the mixed greens, cherry tomatoes, cucumber, and red onion together.
  2. Top the salad with grilled shrimp and avocado slices, and drizzle with the remaining olive oil.

Notes

For added crunch, consider adding croutons or nuts to the salad. If you don't have a grill, roast shrimp in the oven at 400°F for about 6-8 minutes.
