Ingredients
  

For the Shrimp Marinade
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika

For the Wraps
  • 4 large tortillas (flour or whole wheat)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup diced cucumbers
  • ¼ cup salsa or your favorite sauce

Method
 

Preparation
  1. In a bowl, combine olive oil, lime juice, minced garlic, paprika, salt, and pepper. Toss in the shrimp and let them marinate for about 15-20 minutes.
Grilling
  1. Heat up your grill or a grill pan over medium-high heat. Place the marinated shrimp on the grill.
  2. Cook for about 2-3 minutes per side or until they’re bright pink and opaque.
Assembly
  1. Lay each tortilla flat and layer with shredded lettuce, diced tomatoes, cucumbers, and grilled shrimp. Drizzle with salsa.
Wrapping
  1. Fold the sides in, then roll up tightly from the bottom. Toast on the grill for an extra crunch if desired.
