Ingredients
  

For the Salad
  • 1 pound flank steak
  • 8 cups mixed salad greens (romaine, arugula, spinach)
  • 1 cup cherry tomatoes, halved
  • 1 whole avocado, diced
  • ½ whole red onion, thinly sliced
  • ½ cup crumbled blue cheese optional
  • ¼ cup fresh cilantro or parsley, chopped for garnish
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Method
 

Marinate and Grill the Steak
  1. Combine olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper in a bowl.
  2. Toss in the flank steak, ensuring it's well-coated and let it marinate for at least 30 minutes.
  3. Preheat grill to medium-high heat and grill the steak for about 6-7 minutes per side.
  4. Once done, set aside to rest for about 5 minutes before slicing.
Assemble the Salad
  1. In a large bowl, add mixed greens, cherry tomatoes, avocado, red onion, and blue cheese.
  2. Slice the grilled steak against the grain into strips.
Whip up the Dressing
  1. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, and sprinkle with salt and pepper.
  2. Optional: Add Greek yogurt or sour cream for a creamier dressing.
Toss it All Together
  1. Add the steak strips to the salad and drizzle with the dressing.
  2. Toss gently to combine and finish with fresh herbs on top.

Notes

Let the steak marinate longer for more flavor. For added crunch, consider including toasted nuts or seeds. Keep an eye on the grill to avoid overcooking the steak.
