Preparation
- Chill everything first. Keep your lemon-lime soda and pineapple juice in the fridge and pull the sherbet out 10–15 minutes before mixing so it’s soft enough to scoop easily.
- In a large pitcher, stir together the pineapple juice and limeade concentrate (if using).
- Spoon half the lime sherbet into the bottom of the pitcher or divide it among individual glasses.
- Gently pour the lemon-lime soda over the sherbet and pineapple juice.
- Add a drop or two of green food coloring if you want the cartoon-green look.
- Drop the remaining scoops of sherbet on top so each serving has that dreamy float.
- Add maraschino cherries and lime slices. Finish with a sprig of mint if you’re feeling fancy.
- Serve immediately.
Notes
Great for holiday gatherings! For a slightly healthier version, swap half the soda for sparkling water. Can be spiked with rum or vodka for adults.
