  • 2 cups shredded cooked chicken leftover rotisserie chicken works wonders
  • 8 oz cream cheese make sure it's softened
  • 1/2 cup ranch dressing for that creamy kick
  • 1/2 cup Buffalo sauce add more if you like it hot
  • 1 cup shredded cheddar cheese because cheese makes everything better
  • 1/2 cup blue cheese crumbles optional, for the brave souls
  • Chopped green onions for garnish, and a pop of color

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, cream cheese, ranch dressing, Buffalo sauce, and half of your cheddar cheese. Adjust the spiciness to your liking.
Baking
  1. Spread the mixture into a greased baking dish. Top with the remaining cheddar cheese and blue cheese crumbles if using.
  2. Bake for about 20-25 minutes or until bubbly and golden.
Garnishing and Serving
  1. After cooling slightly, sprinkle with chopped green onions and serve with tortilla chips, veggie sticks, or toasted bread.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave. For added heat, splash some hot sauce on top before baking. You can prepare the dip a day in advance; just mix and refrigerate until ready to bake.
