Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the chocolate cake mix, eggs, water, and vegetable oil. Blend until smooth.
- Pour the batter into muffin tins lined with cupcake liners, filling them about two-thirds full.
- Bake for about 18-20 minutes or until a toothpick comes out clean. Allow them to cool completely.
Filling and Decorating
- Once cool, use a knife or cupcake corer to remove the center of each cupcake, creating a well.
- Spoon or pipe your raspberry or strawberry jam into the center of each cupcake, filling it generously.
- In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, milk, and vanilla extract, mixing until fluffy.
- Divide the frosting into two bowls. Leave one bowl white and color the other bowl with red and black food coloring.
- Use a piping bag to swirl the dark red frosting on top of the filled cupcakes and create a 'bite' impression with the white frosting.
- Carefully place mini chocolate chips at the edge of the bite to resemble vampire teeth and optionally add edible glitter or spooky sprinkles.
