Ingredients
  

Popcorn
  • 10 cups popped popcorn (about 1/2 cup unpopped kernels) You can pop the corn using stovetop or microwave.
Caramel Mixture
  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1/2 cup unsalted butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda Caution: it will bubble up.
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (optional) Pecans or almonds work great.

Method
 

Preparation
  1. Start by popping your popcorn. Aim for about 10 cups of fluffy goodness.
Caramel Mixture
  1. In a heavy-bottomed saucepan, combine the brown sugar, corn syrup, butter, and salt. Heat over medium until it reaches a gentle boil, then let it simmer for about 5 minutes.
  2. Remove from heat. Stir in baking soda and vanilla extract. Expect some bubbling.
Combine
  1. Pour the caramel mixture over the popped popcorn in a large bowl and mix well.
Add Nuts
  1. Fold in the nuts if you're using them.
Baking
  1. Preheat the oven to 250°F (120°C). Spread the caramel popcorn on a parchment-lined baking sheet.
  2. Bake for about 45 minutes, stirring every 15 minutes for even coating.
Cooling
  1. Let it cool completely before serving.

Notes

Store in an airtight container to keep it fresh and crunchy. You can add candy corn or M&M's for an extra festive flavor.
