- Remove from heat. Stir in baking soda and vanilla extract. Expect some bubbling.
Combine
- Pour the caramel mixture over the popped popcorn in a large bowl and mix well.
Add Nuts
- Fold in the nuts if you're using them.
Baking
- Preheat the oven to 250°F (120°C). Spread the caramel popcorn on a parchment-lined baking sheet.
- Bake for about 45 minutes, stirring every 15 minutes for even coating.
Cooling
- Let it cool completely before serving.
