  • 1 pound ground beef (or turkey for a lighter option) Can substitute with ground turkey or chicken.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 large head cabbage, chopped
  • 2 cups cooked rice Can use leftover rice.
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth (or vegetable broth) Vegetable broth for a vegetarian option.
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Heat a splash of oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until soft and fragrant, about 3-5 minutes.
  2. Add the ground beef (or turkey) and cook until browned.
  3. Stir in the chopped cabbage and let it wilt down.
  4. Pour in the beef broth, diced tomatoes (with juice), cooked rice, tomato paste, Worcestershire sauce, oregano, and paprika. Stir well and season with salt and pepper to taste.
  5. Bring the soup to a boil, then reduce heat to a simmer, cover, and let cook for about 30 minutes.
  6. Taste and adjust seasoning before serving. Garnish with parsley if desired.

Notes

This recipe freezes well; consider making a big batch. You can add additional vegetables like carrots or bell peppers for a veggie boost. If the soup is too thick, add more broth or water.
