- Heat a splash of oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until soft and fragrant, about 3-5 minutes.
- Add the ground beef (or turkey) and cook until browned.
- Stir in the chopped cabbage and let it wilt down.
- Pour in the beef broth, diced tomatoes (with juice), cooked rice, tomato paste, Worcestershire sauce, oregano, and paprika. Stir well and season with salt and pepper to taste.
- Bring the soup to a boil, then reduce heat to a simmer, cover, and let cook for about 30 minutes.
- Taste and adjust seasoning before serving. Garnish with parsley if desired.
Notes
This recipe freezes well; consider making a big batch. You can add additional vegetables like carrots or bell peppers for a veggie boost. If the soup is too thick, add more broth or water.
