Preparation
- Start by chopping the cabbage, carrots, and onion.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onions and garlic, and sauté until fragrant and slightly translucent.
- Toss in the chopped cabbage and carrots. Stir them around for about 5 minutes.
Cooking
- Pour in the vegetable or chicken broth and the undrained diced tomatoes.
- Sprinkle in the dried thyme, and season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes.
- Before serving, taste the soup and adjust the seasoning as needed.
Serving
- Ladle the hearty cabbage soup into bowls and enjoy with some crusty bread.
Notes
This soup tastes even better the next day. Feel free to toss in other leftover veggies or grains you have. A dash of red pepper flakes can add some heat.
