Ingredients
  

For the crust
  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted
  • 0.25 cups ¼ cup granulated sugar
For the cheesecake filling
  • 2 packages 2 (8-ounce) packages cream cheese, softened
  • 1 cup 1 cup powdered sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 cup 1 cup heavy whipping cream
For the toppings
  • 2 pieces 2 ripe bananas, sliced
  • 0.5 cups ½ cup crushed pineapple, drained
  • 0.5 cups ½ cup sliced strawberries
  • Chocolate syrup
  • Whipped cream (for garnish)
  • Chopped walnuts (optional)

Method
 

Make the Crust
  1. In a medium bowl, combine your graham cracker crumbs, melted butter, and granulated sugar. Mix until it resembles wet sand.
  2. Press this mixture firmly into the bottom of a 9-inch springform pan.
  3. Chill in the fridge while you prepare the cheesecake filling.
Prepare the Cheesecake Filling
  1. In a large bowl, beat together the softened cream cheese and powdered sugar until creamy and smooth.
  2. Add the vanilla extract and mix until combined.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture to preserve fluffy texture.
Assemble Your Cheesecake
  1. Pour the cheesecake filling over the chilled crust, smoothing it out with a spatula.
  2. Layer the sliced bananas, crushed pineapple, and strawberries on top.
  3. Drizzle chocolate syrup generously over the fruit.
Chill and Serve
  1. Cover your cheesecake and place it in the fridge for at least 4 hours or overnight to set.
  2. Before serving, whip up some whipped cream and sprinkle chopped walnuts on top if desired.

Notes

Don't skip the chill time to meld flavors beautifully. Feel free to substitute fruits for toppings. This cheesecake can be made a day in advance.
