Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Blend until smooth.
- Roll out the pie crust and cut it into small circles or shapes.
Assembly and Baking
- Place a dollop of the cream cheese mixture in the center of each piece of pie crust and add a sprinkle of fresh raspberries on top.
- Fold the edges of the pie crust over the filling, pinching to seal them.
- Place on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
Serving
- Allow the bites to cool before dusting with confectioner’s sugar and serving. Enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month. Thaw before serving. Feel free to substitute raspberries with other berries.
