Ingredients
  

For the Cream Cheese Filling
  • 8 oz cream cheese, softened Don't skimp on cream cheese for optimal creaminess.
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
For the Bites
  • 2 cups fresh raspberries (or frozen if needed) If using frozen, thaw and drain completely.
  • 1 pre-made pie crust store-bought or homemade
  • to taste Confectioner’s sugar for dusting Optional but recommended!

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Blend until smooth.
  3. Roll out the pie crust and cut it into small circles or shapes.
Assembly and Baking
  1. Place a dollop of the cream cheese mixture in the center of each piece of pie crust and add a sprinkle of fresh raspberries on top.
  2. Fold the edges of the pie crust over the filling, pinching to seal them.
  3. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
Serving
  1. Allow the bites to cool before dusting with confectioner’s sugar and serving. Enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month. Thaw before serving. Feel free to substitute raspberries with other berries.
