Ingredients
  

For the mousse
  • 1 cup white chocolate chips Melted
  • 1 ½ cups heavy whipping cream Divided
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar
For the raspberry layer
  • 2 cups fresh raspberries
  • 2 tablespoons sugar Adjust based on sweetness of the berries
  • 1 tablespoon lemon juice
For assembly
  • to taste Extra fresh raspberries For garnish
  • to taste white chocolate shavings For garnish

Method
 

Preparation
  1. Start by melting the white chocolate chips using a double boiler or in the microwave in short bursts, being careful not to burn them.
  2. In a mixing bowl, whip 1 cup of heavy cream with the vanilla extract and powdered sugar until soft peaks form.
  3. Once cooled, gently fold the melted white chocolate into the whipped cream.
  4. In another bowl, toss fresh raspberries with sugar and lemon juice. Let sit for about 10 minutes.
Assembly
  1. Layer the ingredients in cute parfait glasses, starting with a layer of white chocolate mousse, followed by a layer of the raspberry mixture. Repeat layers until glasses are full.
  2. Garnish with fresh raspberries and white chocolate shavings.
  3. Chill the parfaits in the fridge for at least an hour before serving to let the flavors mingle.

Notes

You can use frozen raspberries if fresh ones aren't available. Prepare the mousse and raspberry layer a day in advance to save time.
