Ingredients
  

Dressing Base
  • 1/4 cup olive oil Use high-quality olive oil.
  • 2 tablespoons fresh lemon juice For a zippy kick.
  • 1 tablespoon fresh orange juice Adds a touch of sweetness.
  • 1 tablespoon Dijon mustard For a tangy flavor.
  • 1 tablespoon honey or maple syrup Optional for added sweetness.
Herbs and Seasoning
  • 1/4 cup fresh herbs (parsley, cilantro, or basil) Finely chopped.
  • to taste Salt and pepper Season to your preference.

Method
 

Preparation
  1. In a medium bowl, whisk together olive oil, lemon juice, orange juice, Dijon mustard, and honey or maple syrup until smooth.
  2. Stir in the freshly chopped herbs.
  3. Add salt and pepper to taste.
Serving
  1. Drizzle generously over salads, roasted veggies, or grilled chicken.
  2. Store leftovers in an airtight container in the fridge.

Notes

For dried herbs, use about one-third of the amount, as they're more concentrated. You can add a pinch of red pepper flakes for extra heat. For a quick meal, toss this dressing with chickpeas, cherry tomatoes, and spinach.
