Ingredients
  

For the Chicken
  • 1 lb chicken breast, sliced into strips
  • 2 tbsp olive oil
  • 2 cloves garlic, minced because who doesn’t love garlic?
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 whole Juice of 1 lemon hello, zesty goodness!
  • Salt and pepper to taste
For Serving
  • Pita bread (store-bought or homemade)
  • Lettuce, chopped
  • Tomatoes, sliced
  • Red onion, thinly sliced
  • Cucumber, sliced
  • Your choice of sauce (tzatziki or a yogurt-based dressing) works wonders!

Method
 

Preparation
  1. In a large bowl, combine the olive oil, minced garlic, oregano, thyme, lemon juice, salt, and pepper.
  2. Toss in the chicken strips and let them marinate for at least 30 minutes (or overnight if you want to be super organized).
Cooking
  1. Heat a grill or grill pan over medium heat.
  2. Cook the marinated chicken for about 5-7 minutes on each side until they’re golden brown and reach an internal temperature of 165°F.
  3. While the chicken is cooking, warm your pita bread in the oven or on a skillet for just a minute or two.
Assembly
  1. Take your warm pita and layer it with the chicken, fresh veggies, and a generous drizzle of your favorite sauce.
  2. Wrap it up and take the first glorious bite.

Notes

You can make the chicken in advance and even use other vegetables. If you have leftovers, store them in an airtight container in the fridge for up to three days.
