  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 piece juice of 1 lemon

Preparation
  1. Start by patting your lamb chops dry with a paper towel.
  2. In a small bowl, mix together minced garlic, rosemary, thyme, olive oil, salt, and pepper. Rub this mixture all over the lamb chops and let them marinate for at least 30 minutes.
Cooking
  1. Heat a cast-iron skillet or grill pan over medium-high heat.
  2. Once hot, add the lamb chops and sear for about 4-5 minutes on each side for medium-rare.
  3. Once cooked, squeeze fresh lemon juice over the chops.
Resting and Serving
  1. Let the lamb chops rest for about 5 minutes before serving.
  2. Serve them with your favorite sides, like roasted veggies or a fresh salad.

Notes

A meat thermometer can help check doneness; aim for about 145°F for medium-rare. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
