  • 4 pieces boneless, skinless chicken breasts
  • 4 ounces goat cheese, softened
  • 4 slices prosciutto
Herbs and Seasoning
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • to taste Salt and pepper

  • 1 tablespoon balsamic vinegar (optional for drizzling)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness.
  3. In a small bowl, mix the softened goat cheese with the chopped herbs (basil, parsley, thyme), and season with salt and pepper.
  4. Spread the goat cheese mixture evenly over each chicken breast.
  5. Wrap each chicken breast with a slice of prosciutto.
Cooking
  1. In an ovenproof skillet, heat the olive oil over medium-high heat.
  2. Once hot, place the wrapped chicken in the skillet and sear each side for about 3-4 minutes until golden brown.
  3. Transfer the skillet into the preheated oven and bake for about 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Optionally, drizzle with balsamic vinegar before serving.

Notes

Don't rush the searing step for more flavor. For herb alternatives, use dried herbs, and consider substituting goat cheese with feta or blue cheese. Prosciutto can be swapped with bacon if preferred. Leftovers can be frozen for up to 3 months.
