Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a loaf pan.
  2. In a large mixing bowl, beat together the softened cream cheese and butter until fluffy.
  3. Gradually add in the granulated sugar, mixing until well blended.
  4. Add the eggs one at a time, mixing thoroughly each time.
  5. Stir in the mashed bananas and vanilla extract.
  6. In a separate bowl, whisk together the flour, baking soda, and salt.
  7. Gradually add the dry mixture to the wet ingredients until just combined.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for about 60-70 minutes until a toothpick inserted comes out clean.
Cooling
  1. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.

Notes
