  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips Optional, but recommended for extra chocolate flavor!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until it's light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, combine flour, cocoa powder, baking soda, and salt, whisking to ensure everything is well mixed.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  6. Fold in the chocolate chips.
Baking
  1. Drop rounded tablespoons of dough onto ungreased cookie sheets.
  2. Bake for about 10-12 minutes or until edges are set but centers are slightly soft.
  3. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For softer butter, cut it into small cubes and let it sit for about 15 minutes. You can also add a pinch of cinnamon or nutmeg for extra flavor. Store cookies in an airtight container for up to a week, or freeze the dough for up to three months.
