Preparation
- Preheat your oven to 375°F (190°C).
- Unroll the filo pastry and lay one sheet flat on a clean surface. Brush lightly with some melted butter. Repeat with the remaining sheets to have four layers.
- Place the block of feta in the center of the layered filo. Drizzle half of the honey over it, and sprinkle with thyme, salt, and pepper.
- Gather the edges of the filo around the feta, wrapping it like a cozy blanket.
- Place the wrapped feta on a baking sheet lined with parchment paper. Drizzle the rest of the honey over the top and bake for about 25 minutes, or until the filo is golden brown and crispy.

- Let cool briefly, then slice and serve as an appetizer, side dish, or snack.
