  • 4 fillets salmon fillets (approximately 6 ounces each)
  • 1 pound Brussels sprouts (about 1 pound, halved)
  • 3 tablespoons honey
  • 3 cloves garlic (minced) Fresh garlic is preferred.
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • optional Red pepper flakes For some kick!

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the honey, minced garlic, soy sauce, and a pinch of red pepper flakes.
Cooking
  1. Toss the halved Brussels sprouts with olive oil, salt, and pepper on a large baking sheet.
  2. Nestle the salmon fillets among the Brussels sprouts and drizzle the honey garlic sauce over the top.
  3. Bake for about 15-20 minutes, or until the salmon flakes easily with a fork and the Brussels sprouts are golden and crispy.
  4. Serve and enjoy!

Notes

If using garlic powder instead of fresh garlic, use about 1/4 teaspoon per clove. If you buy salmon with skin, place it skin-side down during baking for added moisture.
