  • 4 fillets salmon fillets fresh or frozen
  • 1/4 cup honey
  • 1 cup fresh pineapple chunks or canned if you’re in a pinch
  • 2 tablespoons soy sauce use low-sodium if preferred
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • as needed fresh cilantro or green onions for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together the honey, soy sauce, garlic, and a pinch of salt and pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle the marinade over the salmon, then top with the pineapple chunks.
Cooking
  1. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
Serving
  1. Serve the dish over rice or alongside fresh veggies, garnished with cilantro or green onions.

Notes

Make extra marinade for an even more flavorful salmon. For best results, store leftovers in an airtight container in the fridge for up to 3 days.
