  • 8 oz goat cheese (softened to room temperature) Let sit out for about 30 minutes before mixing.
  • 1/4 cup shelled pistachios (chopped) For a nut-free alternative, consider using sunflower seeds.
  • 2-3 tbsp honey Adjust according to your sweetness preference.
  • a pinch salt Enhances the flavor of the cheese.
Garnish
  • to taste Fresh herbs (like thyme or rosemary) Totally optional but adds a pretty touch!

Method
 

Preparation
  1. In a medium bowl, combine the softened goat cheese and a pinch of salt. Mix gently until fluffy and creamy.
  2. Fold in the chopped pistachios until well-distributed.
  3. Form the mixture into a log or ball using your hands. Alternatively, roll it into a log wrapped in wax paper and chill in the fridge.
  4. Once shaped, place it on a serving platter and drizzle with honey.
  5. Garnish with fresh herbs if desired.
Serving
  1. Serve alongside crackers, apple slices, or veggies for dipping.

Notes

Can be made ahead of time and stored in the fridge. Hold off on the honey drizzle until ready to serve for the best presentation. Leftovers can be stored in an airtight container for up to three days.
