Ingredients
  

For the Hummingbird Bread
  • 2 cups all-purpose flour
  • 1.5 cups sugar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup vegetable oil
  • 3 large eggs
  • 1.5 cups mashed ripe bananas (about 3 medium)
  • 1 cup crushed pineapple, drained
  • 1 tsp vanilla extract
  • 1 cup chopped pecans (or walnuts)
For the Heavenly Cinnamon Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
Mixing Dry Ingredients
  1. In a large bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.
Combining Wet Ingredients
  1. In another bowl, beat the eggs and then add in the oil. Mix in the mashed bananas, drained crushed pineapple, and vanilla extract.
Bringing It All Together
  1. Gently fold the wet ingredients into the dry mix until just combined. Add your chopped pecans.
Baking
  1. Pour the batter into your prepared loaf pan and bake for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Making the Frosting
  1. In a large bowl, beat the softened cream cheese and butter together until creamy. Gradually add the powdered sugar, ground cinnamon, and vanilla, mixing until smooth.
Frosting & Serving
  1. Once your bread has cooled, generously spread the frosting on top.

Notes

For gluten-free, swap out the all-purpose flour. Leftover frosting can be used as a dip for fresh fruit.
