Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
Mixing Dry Ingredients
- In a large bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.
Combining Wet Ingredients
- In another bowl, beat the eggs and then add in the oil. Mix in the mashed bananas, drained crushed pineapple, and vanilla extract.
Bringing It All Together
- Gently fold the wet ingredients into the dry mix until just combined. Add your chopped pecans.
Baking
- Pour the batter into your prepared loaf pan and bake for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Making the Frosting
- In a large bowl, beat the softened cream cheese and butter together until creamy. Gradually add the powdered sugar, ground cinnamon, and vanilla, mixing until smooth.
Frosting & Serving
- Once your bread has cooled, generously spread the frosting on top.
Notes
For gluten-free, swap out the all-purpose flour. Leftover frosting can be used as a dip for fresh fruit.
