Ingredients
  

For the Cake
  • 3-4 medium-sized apples (Granny Smith recommended) Tart apples work best.
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk Can substitute with regular milk and lemon juice.
For the Topping
  • 1 tablespoon brown sugar For caramelization.
  • ½ teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Peel, core, and slice the apples into thin wedges, tossing them in lemon juice to prevent browning. Set aside.
Mixing Ingredients
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  2. In another bowl, cream the softened butter until creamy, then add eggs one at a time along with vanilla extract until well combined.
  3. Gradually mix in the dry ingredients with the butter mixture, alternating with the buttermilk until just combined.
Baking
  1. Fold in the apple slices gently. Pour the batter into the prepared pan and spread evenly, combining brown sugar and cinnamon and sprinkling it on top.
  2. Bake for 50-60 minutes or until a toothpick comes out clean. Let cool for about 10 minutes before transferring to a wire rack.
Serving
  1. Enjoy the cake warm or at room temperature, plain or with whipped cream or vanilla ice cream.

Notes

For a moist cake, consider adding sour cream or yogurt to the batter. Store leftovers wrapped in plastic at room temperature for up to 2 days, or refrigerate for a week.
