  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
Filling Ingredients
  • 1 cup crushed pineapple, drained well Ensure well-drained to avoid sogginess

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy—about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, salt, and baking powder. Gradually add this to your wet mixture, stirring until just combined.
  5. Gently fold in the crushed pineapple, coconut (if using), and chocolate chips.
Baking
  1. Grease a muffin tin and scoop the dough into each cup, filling them about two-thirds full.
  2. Bake for about 18-20 minutes, or until the edges are golden and the tops look set.
  3. Let them cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
