  • 2 cups fresh peaches, peeled and diced (about 4-5 medium peaches)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Pinch salt

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, and salt. Set aside.
  3. In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 3-5 minutes).
  4. Beat in the eggs one at a time, then add vanilla extract and mix until combined.
  5. Gradually add the dry mixture to the egg mixture, alternating with milk, starting and ending with flour. Gently fold in the peaches.
Baking
  1. Pour the batter into a greased 9x13-inch baking dish, spreading it evenly.
  2. Bake for about 40-45 minutes, or until a toothpick comes out clean.
Serving
  1. Let the cake cool for about 30 minutes before serving.
  2. Dust with powdered sugar or serve with whipped cream if desired.

Notes

This cake actually tastes even better the next day. Consider making it a day in advance. It can be served plain or dressed up with toppings.
