Ingredients
  

For the Cheesecake Base
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
For the Cheesecake Filling
  • 8 ounces cream cheese, softened
  • 1/2 cup white chocolate chips, melted
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
For the Topping
  • Additional melted white chocolate for drizzling
  • Optional: Toasted coconut flakes for added flavor

Method
 

Preparation of the Base
  1. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix well until it resembles wet sand.
  2. Press this mixture firmly into a lined mini muffin tin to create an even layer.
Making the Filling
  1. In another bowl, whip together the softened cream cheese, melted white chocolate, sugar, and vanilla extract until smooth and creamy.
  2. Fold in the drained crushed pineapple.
Combining and Chilling
  1. Scoop the cream cheese mixture on top of your graham cracker base in each muffin cup.
  2. Chill in the fridge for at least 3 hours, or until the bites are set.
Finishing Touches
  1. Melt additional white chocolate and drizzle it over the top of the bites.
  2. If desired, sprinkle toasted coconut flakes on top before serving.
Serving
  1. Carefully remove the bites from the muffin tin and arrange them on a plate.

Notes

Use good-quality white chocolate for the best flavor. Ensure the pineapple is well-drained to avoid a soggy filling. These bites can be made ahead of time and stored in an airtight container in the fridge.
