Method
Preparation of the Base
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix well until it resembles wet sand.
- Press this mixture firmly into a lined mini muffin tin to create an even layer.
Making the Filling
- In another bowl, whip together the softened cream cheese, melted white chocolate, sugar, and vanilla extract until smooth and creamy.
- Fold in the drained crushed pineapple.
Combining and Chilling
- Scoop the cream cheese mixture on top of your graham cracker base in each muffin cup.
- Chill in the fridge for at least 3 hours, or until the bites are set.
Finishing Touches
- Melt additional white chocolate and drizzle it over the top of the bites.
- If desired, sprinkle toasted coconut flakes on top before serving.
Serving
- Carefully remove the bites from the muffin tin and arrange them on a plate.
Notes
Use good-quality white chocolate for the best flavor. Ensure the pineapple is well-drained to avoid a soggy filling. These bites can be made ahead of time and stored in an airtight container in the fridge.
