Irresistibly Cheesy Spinach Artichoke Swirls

Ingredients
  

For the Swirls
  • 1 sheet puff pastry (thawed)
  • 1 cup fresh spinach, chopped
  • 1 cup artichoke hearts, drained and chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 beaten egg (for egg wash)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the chopped spinach, artichokes, cream cheese, mozzarella, Parmesan, and minced garlic. Season with salt and pepper. Mix until well combined.
  3. Unroll the puff pastry on a lightly floured surface and roll it out a bit to even it out.
  4. Spread the cheesy mixture all over the puff pastry, leaving about half an inch around the edges.
  5. Starting from one long side, carefully roll the puff pastry into a tight log.
  6. Using a sharp knife, slice the log into 1-inch pieces. Place them cut-side up on the prepared baking sheet.
  7. Brush the tops of the swirls with the beaten egg.
  8. Pop them into the oven and bake for about 20-25 minutes or until they’re puffed and golden brown.
  9. Let them cool for a few minutes before serving warm.

Notes

For extra flavor, add red pepper flakes. Use pre-chopped artichokes and pre-washed spinach to save time. Serve with a light salad or dipping sauce, and store leftovers in the fridge.
