Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the chopped spinach, artichokes, cream cheese, mozzarella, Parmesan, and minced garlic. Season with salt and pepper. Mix until well combined.
- Unroll the puff pastry on a lightly floured surface and roll it out a bit to even it out.
- Spread the cheesy mixture all over the puff pastry, leaving about half an inch around the edges.
- Starting from one long side, carefully roll the puff pastry into a tight log.
- Using a sharp knife, slice the log into 1-inch pieces. Place them cut-side up on the prepared baking sheet.
- Brush the tops of the swirls with the beaten egg.
- Pop them into the oven and bake for about 20-25 minutes or until they’re puffed and golden brown.
- Let them cool for a few minutes before serving warm.
Notes
For extra flavor, add red pepper flakes. Use pre-chopped artichokes and pre-washed spinach to save time. Serve with a light salad or dipping sauce, and store leftovers in the fridge.
