  • 2 cups cooked sushi rice Day-old rice works wonders!
  • 1 tablespoon vegetable oil
  • to taste N/A Salt
For the Salmon
  • 2 fillets salmon (about 6 ounces each)
  • to taste N/A Salt and pepper
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
Toppings
  • to taste N/A Sliced green onions
  • to taste N/A Sesame seeds
  • to taste N/A Pickled ginger Optional

Method
 

Get the Crunch Going
  1. In a large skillet, add vegetable oil over medium-high heat. Once it’s nice and hot, stir in your cooked sushi rice, spreading it out evenly.
  2. Let it cook without stirring for about 5-7 minutes, or until the bottom is golden and crisp.

  1. While your rice is working its crunchy magic, season your salmon fillets with salt and pepper.
  2. Drizzle them with soy sauce and sesame oil for flavor, if desired.
  3. Heat a separate skillet over medium heat and cook the salmon for about 4-5 minutes on each side, depending on your desired doneness.

  1. Once both the rice and salmon are cooked, scoop your crunchy rice onto plates, flake the salmon on top.
