Ingredients
  

Salad Base
  • 2 cups romaine lettuce, chopped Wash and chop into bite-sized pieces.
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper (any color), chopped
  • 1/4 cup red onion, finely sliced
Additions
  • 1/2 cup black olives, pitted and sliced
  • 1/2 cup salami, diced Can substitute with grilled chicken or chickpeas.
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup fresh parsley, chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Start by washing your romaine lettuce. Chop it into bite-sized pieces and throw it into a large mixing bowl.
  2. Halve the cherry tomatoes, dice the cucumber, chop the bell pepper, and slice the red onion.
Combining
  1. Toss the black olives, diced salami, and mozzarella cheese into your bowl of greens and veggies.
  2. In a small bowl, combine olive oil, red wine vinegar, Italian seasoning, salt, and pepper. Whisk until well combined.
  3. Drizzle your dressing over the salad and toss everything together until nicely coated.
Serving
  1. Serve immediately or let it chill in the fridge for about 30 minutes for the flavors to meld together.

Notes

If short on time, chop ingredients ahead of time and store in an airtight container. Picky eaters can substitute salami with grilled chicken, chickpeas, or bacon bits. If dressing separates, give it a quick shake before use.
