Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved Regular tomatoes can be used as a substitute.
  • 1 cup mozzarella cheese, shredded Feel free to add more if you love cheese.
  • 1/2 cup basil pesto (homemade or store-bought) Homemade pesto is recommended for best flavor.
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • as needed Fresh basil leaves for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry with a paper towel then rub them with olive oil, salt, and pepper.
Cooking
  1. Place the chicken breasts in a baking dish and bake for about 20 minutes.
  2. After 20 minutes, take the chicken out and spread the basil pesto over each piece.
  3. Add the halved cherry tomatoes on top followed by shredded mozzarella cheese.
  4. Return the dish to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is bubbly.
Serving
  1. Garnish with fresh basil leaves if desired and serve with a side salad or garlic bread.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Invest in a good meat thermometer to ensure chicken is cooked to an internal temperature of 165°F (75°C).
