Preparation
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry with a paper towel then rub them with olive oil, salt, and pepper.
Cooking
- Place the chicken breasts in a baking dish and bake for about 20 minutes.
- After 20 minutes, take the chicken out and spread the basil pesto over each piece.
- Add the halved cherry tomatoes on top followed by shredded mozzarella cheese.
- Return the dish to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is bubbly.
Serving
- Garnish with fresh basil leaves if desired and serve with a side salad or garlic bread.
Notes
Leftovers can be stored in an airtight container in the fridge for up to three days. Invest in a good meat thermometer to ensure chicken is cooked to an internal temperature of 165°F (75°C).
