Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it up into smaller pieces as it cooks until nicely browned and cooked through. Season with salt and pepper.
- Add the gnocchi and marinara sauce, stirring until well combined. Bring to a gentle simmer and let bubble for about 5 minutes.
Layering and Baking
- In a large baking dish, layer half of the gnocchi and sausage mixture, dollop on half of the ricotta, and sprinkle spinach over it.
- Repeat layering with the remaining ingredients.
- Top with shredded mozzarella and sprinkle grated Parmesan over everything.
- Cover the dish with foil and bake for about 30 minutes. Remove the foil and bake for an additional 10 minutes until bubbly and golden brown.
- Let it cool for a minute, garnish with fresh basil, and serve.
Notes
Feel free to substitute vegetables according to availability. This dish tastes even better the next day and can be stored in an airtight container in the fridge for up to 3 days.
