Ingredients
  

Pasta and Proteins
  • 1 pound cheese tortellini store-bought or homemade
  • 3 ounces sliced salami cut into strips
Cheese and Vegetables
  • 8 ounces mozzarella pearls or diced mozzarella
  • 1 cup cherry tomatoes halved
  • 1 cup diced cucumber
  • 1/2 medium red onion thinly sliced
  • 1/2 cup black olives sliced (optional)
  • 1/4 cup fresh basil chopped
Dressing
  • 1/2 cup Italian dressing to taste
  • Salt and pepper to taste

Method
 

Cooking
  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package directions—generally around 3-5 minutes or until they float to the surface.
Mixing
  1. While the tortellini is cooking, grab a big mixing bowl. Toss in the salami strips, mozzarella pearls, cherry tomatoes, cucumber, red onion, and olives if you’re feeling daring.
  2. Once the tortellini is done, drain it and rinse it under cold water to cool it down. Add the tortellini to the colorful bowl you just created.
Dressing and Serving
  1. Drizzle the Italian dressing over the salad. Add fresh basil, salt, and pepper. Gently toss everything together, making sure every bite is filled with yumminess.
  2. If you have time, let your salad chill in the fridge for at least 30 minutes to let those flavors mingle.

Notes

This salad is great for meal prepping. It keeps well in the fridge for up to three days. Feel free to substitute the salami with pepperoni or grilled chicken, and use dried herbs if fresh basil is unavailable.
