Ingredients
  

For the Filling
  • 8 ounces cream cheese, softened Use softened for easier mixing.
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced jalapeños (fresh or canned)
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
For the Egg Rolls
  • 12 pieces egg roll wrappers
  • as needed Oil for frying (canola or vegetable)

Method
 

Preparation
  1. In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, green onions, garlic powder, salt, and pepper. Mix until well combined.
Assembly
  1. Lay one egg roll wrapper on a clean surface, with one corner facing you. Place a spoonful of the jalapeño mixture near the corner, fold that corner over the filling, then fold in the sides. Roll it away from you to seal.
Frying
  1. In a deep frying pan, heat about an inch of oil over medium-high heat. Check if oil is ready by tossing in a tiny bit of the filling.
  2. Carefully place a few egg rolls in the hot oil and fry until golden brown, about 3-4 minutes on each side. Let them drain on paper towels.
Serving
  1. Serve hot with dipping sauces like ranch or spicy aioli.

Notes

Make sure to seal the egg rolls well to prevent the filling from spilling out. Experiment with the filling by adding cooked bacon or hot sauce.
