Ingredients
  

For the filling
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup pickled jalapenos, chopped Add more if you’re feeling spicy!
  • 1 tsp garlic powder
  • 1 tsp onion powder
For assembly and frying
  • 8 pieces egg roll wrappers Make sure to arrange them correctly.
  • Oil for frying (vegetable or canola)
  • Optional: ranch dressing for dipping A great accompaniment.

Method
 

Preparation
  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped jalapenos, garlic powder, and onion powder. Stir until everything is beautifully mixed.
Assembly
  1. Lay out an egg roll wrapper on a clean surface with a corner pointed towards you, like a diamond shape.
  2. Spoon about two tablespoons of the jalapeno mixture onto the center of the wrapper.
  3. Fold the bottom corner over the filling, tuck in the sides, and roll upwards, sealing the top corner with a little water.
  4. Repeat with the remaining wrappers.
Cooking
  1. In a large skillet, pour enough oil to cover the bottom with about an inch of oil. Heat it over medium-high heat.
  2. Once hot, carefully place a few egg rolls in the oil. Fry until they are golden brown and crispy, usually about 2-3 minutes on each side.
Serving
  1. Remove the egg rolls from the oil and place them on a paper towel to drain excess oil.
  2. Serve hot with ranch dressing on the side for dipping.

Notes

Feel free to add extra jalapenos or different cheeses. You can bake them at 425°F (220°C) for 15-20 minutes instead of frying.
