Ingredients
  

For the Crust
  • 1 cup graham cracker crumbs Crust makes everything better!
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
For the Filling
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice Freshly squeezed preferred.
  • 2 large eggs
  • 1 cup sweetened shredded coconut We love our coconut here!
  • Zest of 2 limes lime zest For that extra zing!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, shredded coconut, sugar, and melted butter until it resembles sandy beach vibes.
  3. Press the mixture into the bottom of an 8×8-inch baking dish evenly and bake for about 10 minutes or until it sets lightly.
Filling Preparation
  1. In a new bowl, whisk together sweetened condensed milk, key lime juice, and eggs until well combined.
  2. Stir in shredded coconut and lime zest.
  3. Pour the filling over the prepared crust and return it to the oven, baking for about 20-25 minutes until it sets (the center should be slightly jiggly but not liquid).
  4. Once baked, remove from the oven and allow to cool before slicing into squares.

Notes

Feel free to toast shredded coconut for a crunchy topping. Substitute sweetened condensed milk for a non-dairy option if needed.
