Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, shredded coconut, sugar, and melted butter until it resembles sandy beach vibes.
- Press the mixture into the bottom of an 8×8-inch baking dish evenly and bake for about 10 minutes or until it sets lightly.
Filling Preparation
- In a new bowl, whisk together sweetened condensed milk, key lime juice, and eggs until well combined.
- Stir in shredded coconut and lime zest.
- Pour the filling over the prepared crust and return it to the oven, baking for about 20-25 minutes until it sets (the center should be slightly jiggly but not liquid).
- Once baked, remove from the oven and allow to cool before slicing into squares.
Notes
Feel free to toast shredded coconut for a crunchy topping. Substitute sweetened condensed milk for a non-dairy option if needed.
