  • 1 cup graham cracker crumbs
  • 1/4 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup cream cheese, softened or mascarpone for extra creaminess
  • 2 pieces key limes, zest adjust based on preference
  • 1/4 cup fresh key lime juice freshly squeezed for maximum flavor
  • 1 cup semi-sweet chocolate chips for coating
  • extra graham cracker crumbs optional for rolling

Method
 

Preparation
  1. In a mixing bowl, combine graham cracker crumbs, powdered sugar, and cocoa powder. Whisk to blend, ensuring no lumps remain.
  2. Add cream cheese, key lime zest, and juice. Mix until a smooth, creamy mixture is formed. Use hands if necessary for mixing.
  3. Cover the bowl with plastic wrap and refrigerate for about 30 minutes to help firm up the mixture.
  4. After chilling, take about a tablespoon of the mixture and roll it into small balls. Place them on a lined baking sheet.
  5. Melt chocolate chips in a microwave-safe bowl, heating in 15-20 second bursts, stirring until smooth.
  6. Dip each truffle into the melted chocolate, allowing excess to drip off, then place on the baking sheet.
  7. If desired, roll the chocolate-covered truffles in extra graham cracker crumbs for garnish.
  8. Refrigerate the truffles until the chocolate is set, about an hour.

Notes

For a twist, substitute key lime juice with regular limes for a different flavor. You can also add coconut rum for a boozy version. These truffles can be stored in the fridge for about a week.
