- In a mixing bowl, combine graham cracker crumbs, powdered sugar, and cocoa powder. Whisk to blend, ensuring no lumps remain.
- Add cream cheese, key lime zest, and juice. Mix until a smooth, creamy mixture is formed. Use hands if necessary for mixing.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes to help firm up the mixture.
- After chilling, take about a tablespoon of the mixture and roll it into small balls. Place them on a lined baking sheet.
- Melt chocolate chips in a microwave-safe bowl, heating in 15-20 second bursts, stirring until smooth.
- Dip each truffle into the melted chocolate, allowing excess to drip off, then place on the baking sheet.
- If desired, roll the chocolate-covered truffles in extra graham cracker crumbs for garnish.
- Refrigerate the truffles until the chocolate is set, about an hour.
Notes
For a twist, substitute key lime juice with regular limes for a different flavor. You can also add coconut rum for a boozy version. These truffles can be stored in the fridge for about a week.
