Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground beef or turkey, breadcrumbs, green onions, soy sauce, sesame oil, minced garlic, grated ginger, egg, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about one inch in size, and place them on a baking sheet lined with parchment paper.
Cooking
- Bake the meatballs in the preheated oven for about 20 minutes, or until they are golden brown and cooked through.
- Meanwhile, in a small saucepan over medium heat, combine the apricot preserves, soy sauce, rice vinegar, and sriracha (if using). Stir until the mixture is smooth and bubbly.
- Once the meatballs are out of the oven, coat them in the apricot glaze.
Serving
- Transfer the glazed meatballs to a serving platter, sprinkle with extra green onions, and serve.
Notes
Don’t overmix the meatball mixture to avoid tough meatballs. You can freeze leftovers for up to three months.
