  • 3-4 lbs beef chuck roast For the ultimate comfort.
  • 2 tablespoons gochujang The star of the show!
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons sesame oil
  • 1 teaspoon ginger, grated For that extra zing.
  • 2 medium carrots, sliced
  • to taste Salt and pepper

Method
 

Preparation
  1. Start by seasoning that beautiful roast with salt and pepper.
Flavor Base
  1. In a large skillet over medium heat, drizzle in your sesame oil. Sauté onions and garlic until fragrant.
  2. Add your gochujang and stir it in well.
Cooking
  1. Transfer your seasoned roast to a slow cooker. Pour in the beef broth, soy sauce, brown sugar, and grated ginger. Add carrots and potatoes if desired.
  2. Cover and cook on low for about 8 hours or high for 4 hours.
Serving
  1. Serve the pot roast over a bed of rice or mashed potatoes, drizzling the gravy over the top.

Notes

Adjust the gochujang to suit your desired spice level. Leftovers improve in flavor when stored and can be reheated gently.
