Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until softened.
- Toss in the mushrooms and sauté until golden and tender, about 5-7 minutes. Season with salt, pepper, basil, and oregano. Mix in diced ham and cook for another couple of minutes.
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside, saving some pasta water.
Layering
- Spread a thin layer of marinara sauce in a large baking dish.
- Place a layer of noodles, half of the ricotta cheese, half of the mushroom and ham mixture, and a generous layer of mozzarella cheese.
- Repeat this process, finishing with a layer of noodles topped with marinara and a sprinkle of mozzarella and Parmesan cheese.
Baking
- Cover the baking dish with aluminum foil and bake for about 25 minutes.
- Remove the foil and continue baking for another 15 minutes until the top is golden and bubbly.
- Let the lasagna rest for about 10 minutes before slicing.
Notes
Make the lasagna a day in advance for flavors to mingle. You can substitute ham with ground turkey or omit it for a vegetarian option. Stores in the fridge for up to 3 days or can be frozen.
