Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until thoroughly combined.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth.
- Carefully mix in the boiling water to add moisture.
Baking
- Divide the batter evenly between two greased and floured round cake pans.
- Bake in your preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the baked layers cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Making the Frosting
- In a large bowl, beat the softened butter until creamy and fluffy.
- Gradually mix in confectioners' sugar, cocoa powder, and salt.
- Add heavy cream (or milk) and vanilla extract. Beat until smooth.
Assembly
- Place the first cake layer on a cake stand or plate and slather on frosting.
- Top with the second layer and frost the top and sides of the cake.
- Decorate as desired with chocolate shavings, fresh berries, or powdered sugar.
Notes
Using room temperature ingredients creates a smoother batter. Don’t skip the boiling water to enhance cocoa flavor and moisture. Remember that aesthetics aren’t everything, it’s all about taste!
