Ingredients
  

For the Cake
  • 1.75 cups all-purpose flour
  • 0.75 cups unsweetened cocoa powder
  • 2 cups sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs room temperature
  • 1 cup whole milk room temperature
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water use microwave if in a hurry
For the Frosting
  • 1 cup unsalted butter, softened
  • 3.5 cups confectioners' sugar
  • 0.5 cups cocoa powder
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract
  • 0.25 cups heavy cream or milk for a lighter version

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until thoroughly combined.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth.
  4. Carefully mix in the boiling water to add moisture.
Baking
  1. Divide the batter evenly between two greased and floured round cake pans.
  2. Bake in your preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  3. Let the baked layers cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Making the Frosting
  1. In a large bowl, beat the softened butter until creamy and fluffy.
  2. Gradually mix in confectioners' sugar, cocoa powder, and salt.
  3. Add heavy cream (or milk) and vanilla extract. Beat until smooth.
Assembly
  1. Place the first cake layer on a cake stand or plate and slather on frosting.
  2. Top with the second layer and frost the top and sides of the cake.
  3. Decorate as desired with chocolate shavings, fresh berries, or powdered sugar.

Notes

Using room temperature ingredients creates a smoother batter. Don’t skip the boiling water to enhance cocoa flavor and moisture. Remember that aesthetics aren’t everything, it’s all about taste!
