Ingredients
  

For the Lemon Chili Grilled Chicken
  • 4 pieces boneless, skinless chicken breasts Ensure they are of even thickness for cooking.
  • 1/4 cup olive oil Use extra virgin for best flavor.
  • 3 tablespoons lemon juice Freshly squeezed is best!
  • 1 tablespoon honey
  • 2 teaspoons chili powder Adjust to taste for spiciness.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper To enhance flavor.
For the Fresh Cucumber Salad
  • 2 cups cucumber, diced Pick your favorite variety.
  • 1 cup cherry tomatoes, halved
  • 1/2 large red onion, finely chopped
  • 1/4 cup fresh parsley, chopped For freshness.
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • to taste Salt and pepper To season.
For the Hummus
  • 1 can (15 oz) chickpeas, drained and rinsed Canned for convenience.
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • to taste Salt Adjust as needed.
  • Water for consistency Add gradually to achieve desired thickness.

Method
 

Marinate the Chicken
  1. In a bowl, whisk together olive oil, lemon juice, honey, chili powder, garlic powder, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
Prepare the Cucumber Salad
  1. In a large bowl, combine diced cucumber, cherry tomatoes, red onion, and parsley. Drizzle with olive oil and red wine vinegar, season with salt and pepper, and toss to combine.
Grill the Chicken
  1. Preheat grill (or grill pan) over medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes on each side until cooked through.
Make the Hummus
  1. In a food processor, blend together chickpeas, tahini, olive oil, lemon juice, garlic, and salt. Add water to achieve desired consistency.
Assemble the Bowls
  1. In serving bowls, layer fresh cucumber salad, sliced grilled chicken, and a generous scoop of hummus.

Notes

Consider butterflying thick chicken breasts for even cooking and adding red pepper flakes for extra heat. Doubling the hummus recipe is a great idea for snacks.
