Ingredients
  

Tofu and Marinade
  • 1 block firm tofu (about 14 ounces) Make sure to drain and pat it dry.
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons olive oil
  • 2 tablespoons fresh coriander Parsley works as a substitute.
  • 2 cloves garlic, minced
  • to taste Salt and pepper
Equipment
  • 8 Wooden skewers Soak for about 30 minutes before use.

Preparation
  1. Drain the tofu and pat it dry. Cut it into cubes, around one inch in size.
  2. In a large bowl, combine lemon juice, lemon zest, olive oil, coriander, minced garlic, salt, and pepper.
  3. Toss the tofu cubes in the marinade, ensuring they are well-coated. Let marinate for at least 20 minutes.
Cooking
  1. Assemble the marinated tofu cubes onto the wooden skewers. Optionally, alternate with veggies like bell peppers, zucchini, or cherry tomatoes.
  2. Preheat your grill or skillet. Grill the skewers for 10-15 minutes, turning occasionally until golden and lightly charred.

Notes

For a spicy kick, add a pinch of chili flakes to the marinade. These skewers can be enjoyed hot or cold and are versatile for salads or served over rice or quinoa.
