- In a large bowl, combine lemon juice, lemon zest, olive oil, coriander, minced garlic, salt, and pepper.
- Toss the tofu cubes in the marinade, ensuring they are well-coated. Let marinate for at least 20 minutes.
Cooking
- Assemble the marinated tofu cubes onto the wooden skewers. Optionally, alternate with veggies like bell peppers, zucchini, or cherry tomatoes.
- Preheat your grill or skillet. Grill the skewers for 10-15 minutes, turning occasionally until golden and lightly charred.
Notes
For a spicy kick, add a pinch of chili flakes to the marinade. These skewers can be enjoyed hot or cold and are versatile for salads or served over rice or quinoa.
