Preparation
- Start by patting your chicken breasts dry with a paper towel. Season both sides with a sprinkle of salt and pepper.
- In a large skillet, melt 2 tablespoons of butter over medium heat.
- Once the butter is bubbling, add the chicken to the skillet in a single layer. Cook for about 5-7 minutes on each side until they’re golden brown and cooked through.
- Remove the chicken from the skillet and set it aside. In the same skillet, toss in another 2 tablespoons of butter and the minced garlic. Sauté for about a minute until fragrant.
- Pour in the chicken broth, lemon juice, and thyme. Stir it all together while scraping any delicious brown bits off the bottom of the pan.
- Reduce the heat to low and return the chicken to the skillet. Let it simmer for about 2-3 minutes in the sauce.
- Plate the chicken, drizzle with the butter sauce, and sprinkle chopped parsley on top for garnish.
Notes
You can add lemon zest for more citrus flavor. This dish is great for meal prep and pairs well with steamed veggies or rice.
