Preparation
- Pat the scallops dry with a paper towel to help them sear perfectly.
- Sprinkle salt and pepper on both sides of the scallops.
Cooking
- In a large skillet over medium-high heat, melt 2 tablespoons of butter.
- Once hot and bubbly, add the scallops and sear them for about 2-3 minutes on each side until golden brown.
- Transfer the scallops to a plate.
- In the same skillet, add the remaining tablespoon of butter and the minced garlic. Cook for about 30 seconds until fragrant but not burnt.
- Pour in lemon juice, stirring to scrape up any brown bits from the pan.
- Return the scallops to the pan and toss gently in the lemon garlic butter.
Serving
- Remove from heat, sprinkle with chopped fresh parsley, and serve immediately over pasta, rice, or with steamed veggies.
Notes
Give the scallops space in the pan to sear well. If the sauce looks lumpy, it's part of the magic! Pairs beautifully with a crisp white wine like Sauvignon Blanc.
