Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil

  • Salt and pepper to taste
For the Feta Tzatziki
  • 1 cup Greek yogurt
  • 1 piece cucumber, grated and drained
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon dill (fresh or dried)
  • Salt to taste
For Assembly
  • Pita bread (store-bought or homemade) Use fresh for best flavor.
  • Roasted bell peppers (red, yellow, or orange) For a colorful touch.
  • Fresh herbs like parsley or mint (optional) For garnish.

Method
 

Marination
  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper. Add the chicken breasts and ensure they are well coated. Let marinate for at least 30 minutes.
Cooking Chicken
  1. Heat a grill pan over medium heat. Once hot, add the marinated chicken. Cook for about 6-7 minutes on each side until fully cooked and grill marks are visible. Let rest, then slice into strips.
Making Tzatziki
  1. In a separate bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt to create the tzatziki.
Roasting Bell Peppers
  1. If you need roasted bell peppers, slice fresh ones, toss with olive oil, salt, and pepper, then roast in the oven at 400°F (200°C) for 20-25 minutes until tender and slightly charred.
Assembling Pitas
  1. Spread a generous layer of feta tzatziki on one side of warm pita bread. Layer in sliced chicken and roasted bell peppers. Add fresh herbs if desired.
Serving
  1. Cut stuffed pitas in half, plate, and enjoy the flavor explosion!

Notes
