Lemon Herb Butter Steak with Fluffy Mashed Potatoes

Ingredients
  

For the Steak
  • 2 pieces boneless ribeye steaks (about 1-inch thick) Ribeye steaks recommended for their marbling.
  • to taste Salt and freshly cracked pepper
  • 2 tbsp olive oil For searing the steak.
  • 1/4 cup unsalted butter, softened For the herb butter.
  • 1 piece Juice and zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped Alternative herbs such as rosemary or oregano can be used.
For the Mashed Potatoes
  • 2 large russet potatoes, peeled and cubed
  • 1/2 cup milk (or cream for extra richness) Use cream for a richer flavor.
  • 1/4 cup unsalted butter, melted
  • to taste Salt and pepper
  • to taste Fresh chives (optional, for garnish)

Method
 

Prepare the Potatoes
  1. In a large pot, add the cubed potatoes and cover them with water.
  2. Bring them to a boil and season with salt.
  3. Cook until tender (about 15-20 minutes).
  4. Drain the water and return the potatoes to the pot.
Mash Those Potatoes
  1. Add melted butter and milk (or cream) to the potatoes.
  2. Mash until smooth and creamy.
  3. Season with salt and pepper to taste.
  4. If you're feeling fancy, toss in some chopped chives for a fresh kick.
Sear the Steak
  1. While your potatoes are cooking, heat olive oil in a heavy skillet over medium-high heat.
  2. Generously season both sides of each steak with salt and pepper.
Get Flipping
  1. Once the skillet is hot, add the steaks.
  2. Sear for about 4-5 minutes on one side for medium-rare.
  3. Flip the steaks.
Create the Herb Butter
  1. In a small bowl, combine softened butter, lemon juice, lemon zest, minced garlic, parsley, and thyme.
  2. Once you flip the steaks, add this mixture to the skillet.
  3. Spoon the melting butter over the steaks as they finish cooking.
Rest and Serve
  1. Remove the steaks from the skillet and let them rest for a few minutes.
  2. Slice the steaks and serve alongside a generous scoop of fluffy mashed potatoes.
  3. Drizzle some of that lemon herb butter sauce over it all.

Notes

For extra fluffy mashed potatoes, use a potato masher instead of a food processor. Feel free to swap the ribeye steak with your favorite cut or try chicken breasts or portobello mushrooms as alternatives.
